Fresh button mushrooms can be used in all the traditional ways from soup to pizza to salads. When you grow your own, you can pick them at the perfect size for stuffing, or frying. My mother loves them just sliced and cooked in butter.
An easy mushroom to grow, and the most commonly cultivated mushroom in the world. This mushroom is a genetic mutant from the Brown Button mushroom which was popular in the early part of the 20th century, until the White button was cultivated in its place.
Originally, growers used Agaricus Bitorquis for white button cultivation (shorter stemmed variety). They eventually switched it out for the white mutant Agaricus Bisporus (originally a brown mushroom, still frequently used for Portobellos and Criminis). Agaricus Bitorquis is a firmer white button with a shinier cap which is similar to Agaricus Campestris (the Meadow Mushroom). Agaricus Bisporus transports better than A. Bitorquis.
