Gold Cap Stropharia And Portobello Soup
Uses Stropharia Ambigua and Agaricus Brunnescens (or A. Bisporus or other non-aromatic Agaricus mushrooms, or even Russula, Slippery Jack or any mild flavored mushroom).
Gold Cap Stropharia has a strong earthy, foresty odor, and a flavor that can be overpowering if used incorrectly, so please follow the amounts listed. It may also cause digestive upset if over-consumed, so please do not increase the amount per serving. Cooking time for the Stropharia is also critical, because it requires a longer cooking time than some mushrooms, both to reduce chances of digestive upset, and to meld the flavors so you don't get bits of overpowering flavor from it.
- 3 cups water
- 2 Gold Cap Stropharia caps, diced
- 1 medium sized Portobello mushroom, or 3 Crimini mushrooms, diced
- 1/2 medium sized onion, diced
- 1 clove garlic, minced
- 1 chicken breast, cubed (may be raw)
- 2 TBSP butter
- Salt to taste
Toss it all into a sauce pot, bring to a simmer, cover and turn heat down. Keep it simmering for about an hour (if water level drops too much, add more). If you use pre-cooked chicken, please do not reduce cooking time, the mushrooms NEED this much time to cook. The easiest way to do this is to start it in a crock pot in the morning and let it cook all day.
Serve with toasted bread, or fresh baked bread.
