Aspen Bolete
Leccinum Insigne dried mushrooms
Sample $2 - 1"X1" (approx.) piece
1/4 OZ $6
This is an orange capped mushroom that bruises violet-gray, and the bruises darken to gray or black. It dries well, but has a lot of gray staining on the under side of the cap. We preserve these with the CAP only, the spore surface is removed, and the stems are not included. This reduces chances of reactions, but you still MUST cook it well, it causes reactions if it is not completely cooked. - 5
Aspen Bolete Stems
Leccinum Insigne Stipe dried mushrooms
Sample $2 - 1" piece of stem half
1/4 OZ $6
The stipes of Aspen Boletes stain a different color than the caps, and this is due to slightly different chemical content. Cook extremely well, or use medicinally. - 1.5
Birch Bolete
Leccinim Scabrum dried mushrooms
Sample $2 - 1"X1" (approx.) piece
1/4 OZ $7
This is a brown capped mushroom that does not bruise like the orange capped cousins. It dries well, but has a little graying on the under side of the cap as it dries. We preserve these with the CAP only, the spore surface is removed, and the stems are not included. This reduces chances of reactions, but you still MUST cook it well, it causes reactions if it is not completely cooked. - 1
Little Shiitake
Lentinus Tigrinus dried mushrooms
Sample $2 - 1"X1" (approx.) piece
1/4 OZ $8
This is unmistakably related to the familiar Shiitake, but the cap is smoother, and has a metallic sheen to it. Cook and use like Shiitake mushrooms. NOTE: There are MISTAKEN IDS out there on this mushroom, it is NOT a Neolentinus, and it is NOT a funnel shaped mushroom. The funnel shaped one is Neolentinus Lepideus, and NEVER WAS Lentinus Tigrinus, which has always had the nickname of Little Shiitake which tells you that it is NOT a funnel mushroom, but a cap that bears resemblence to a Shiitake (some fibrils on the cap, flocculous stipe, and crumpled cap edge that leaves a fold line around the edge of the gills). - 1
White Blewit
Lepista Irina dried mushrooms
Sample $3 - 1"X1" (approx.) piece
1/4 OZ $9
The fresh specimen smells of orange juice, but the dried White Blewits don't have that smell. This is a choice gourmet mushroom. Must be cooked well. - 2
Peach Blewit
Lepista Persici dried mushrooms
Sample $4 - 1"X1" (approx.) piece
1/4 OZ NOT AVAILABLE
This is the one you've heard about! Lovely peachy color in the fresh mushroom, but it fades in dried specimens, so you won't get to see that lovely coloration. Fresh also smells of orange juice, and the dried does not. It is still a choice Blewit mushroom. Must be cooked well. - (4)
Fried Chicken Mushroom
Lyophyllum Decastes dried mushrooms
Sample $3 - 1"X1" (approx.) piece
1/4 OZ $8
The historic depression mushroom. This is the large one that was used so heavily during times of famine. Brown mushroom, the color darkens some with drying. Fairly large caps. - 3
Fried Goose Mushroom
Lyophyllum Loricatum dried mushrooms
Sample $3 - 1-2 small caps
1/4 OZ $8
Cousin to the Fried Chicken Mushroom, considered to be part of the Lyophyllum Decastes Group, but is distinctly different both in growth habit and in flavor, which is a little stronger in this one. Smaller caps, and more buttons due to clumping growth habit. Dark gray caps. - 1
Ugly Funnel
Paxillus Involutus dried mushrooms
Sample $4 - 1"X1" (approx.) piece
1/4 OZ NOT AVAILABLE
This thing bruises so easily that it ends up looking pretty battered by the time you get it home. After drying it is dark brown. Useful for a medicinal (be sure you know what it does, it must be used very carefully), and edible if it is stewed for several days. - 1
Spring Breadroll
Paxillus Vernalis dried mushrooms
Sample $4 - 1"X1" (approx.) piece
1/4 OZ $12
Does not bruise like P. involutus, but the same cautions apply. Apparently this one only needs stewed for a day and a half though! - 1
Yellow Stump Mushroom
Pholiota Adiposa dried mushrooms
Sample $4 - 1"X1" (approx.) piece
1/4 OZ $12
Edible but not a favorite. Useful medicinal also. Make sure you understand what it is and how to use it before you use it. - 4
Aspen Oyster
Pleurotus Populinus dried mushrooms
Sample $2 - 1"X1" (approx.) piece
1/4 OZ $6
Nice off-white Oyster mushroom. Common culinary lore is that Oysters do not reconstitute well, but they will do so if you pop them in a pressure cooker, or if you soak it overnight in the fridge and then heat it in the water. Oysters are really good cut into small pieces, fried in butter, and tossed into a chicken salad sandwich. Dries to a darker color. - .5
Dirty Meadow Mushroom
Pluteus Petasatus dried mushrooms
Sample $3 - 1"X1" (approx.) piece
1/4 OZ $8
A white cap with gray markings on top that make it look dirty. Cook well, this is like other Pluteus mushrooms in that way. This is not a strong flavored Pluteus. - 1
Orange Pig's Ear
Polyporus Elegans dried mushrooms
Sample $2 - 1"X1" (approx.) piece
1/4 OZ NOT AVAILABLE
Best used for medicinals, or pressure cook, dry, and grind for powder. MUST be cooked well. - (3)
Shrimp Russula
Russula Xerampelina dried mushrooms
Sample $2 - 1"X1" (approx.) piece
1/4 OZ $6
So Russula Mushrooms don't reconstitute well if they are left whole. Crush them up into your soup, or reconstitute the crushed mushroom, cook it, and stir into casseroles, chili, pasta, etc. - 2
Hawk's Wing
Sarcodon Imbricatus dried mushrooms
Sample $4 - 1"X1" (approx.) piece
1/4 OZ $10
A savory mushroom that flavors food nicely if you go in for that sort of thing. This one is great because it can be crushed and reconstituted, and used as a seasoning. - 1
Chicken Fat Mushroom
Suillus Americanus dried mushrooms
Sample $2 - 1"X1" (approx.) piece
1/4 OZ NOT AVAILABLE
This is used crushed, reconstituted, cooked, and stirred into whatever. I always go for the thing that works the quickest, so I tend to use it in soups where it can reconstitute while the soup cooks. This Suillus does not require that the cap be peeled before eating. It dries to a very dark color. - (5)
Soapy Trich, Man In Bathtub
Tricholoma Saponaceum dried mushrooms
Sample $3 - 1"X1" (approx.) piece
1/4 OZ NOT AVAILABLE
Must be parboiled to be edible. Useful medicinal also. - (6)
