Pine Mulch Mushroom
Agaricus Benesii is a mushroom that is often found growing in mulched areas under conifers. It grows well in a mulched garden that has conifer wood or sawdust as part of the mulch mix, or in compost that has the same.
Much like the familiar white button, the Pine Mulch Mushroom produces similar sized mushrooms which are often grayer in color, or more tannish in color than the white button, depending on how much sun it gets. It is edible, and is used in recipes the same way White Button mushrooms are used, with similar results.
It prefers dappled shade, so it will grow well in a container indoors (in the fridge at night, out in the day) under artificial lighting, or outdoors under the remains of the squash and kale. It seems to prefer cultivated areas where the ground is periodically disturbed, so pulling weeds or planting a new crop won't bother it. It fruits in the early or late winter, just when you need crops to come in. If you grow a winter garden, it will thrive alongside your cold crops.
